Protein Packed Chicken Salad with Curry Recipe

Years ago, I came across a recipe that suggested swapping out the mayo in chicken salad with Greek yogurt. This significantly reduces the fat and calorie content while increasing the protein. A half cup of mayo approximately has 39 grams of fat, 458 calories, and only one gram of protein. Non-fat Greek yogurt has zero fat, 70 calories, and approximately 12 grams of protein. That's a big difference!
But, honestly, chicken salad made with Greek yogurt doesn't have the same taste. That's where the curry come into play! If you like the flavor of curry powder, add it in and you probably won't even realize you are eating Greek yogurt.
Plus, curry has several health benefits as well. Made from a blend of spices (turmeric, cumin, coriander, and ginger), research suggests that it promote digestive health and can reduce inflammation in the gut. Thanks to the turmeric, it is also an antioxidant and protects cells from free radicals.
If you like a smooth chicken salad, I recommend combining chicken, Greek yogurt, curry, and dried cranberries. However, if you like some crunch, feel free to throw in some diced red onions and chopped celery as well.

PROTEIN PACKED CHICHEN SALAD WITH CURRY RECIPE
Ingredients
2 cups cooked, shredded chicken
2 cups Greek yogurt (approximate depending on how creamy you like it)
1/2 cup dried cranberries
Curry powder (to taste)
Optional Ingredients
1 rib celery, chopped (optional)
1/4 cup red onion, diced (optional)
Directions
Mix all ingredients together. Be sure to taste it and add more curry as needed.
Refrigerate or serve immediately on greens, in a wrap, or with bread.
Time-saving Tip
Use rotisserie chicken or pre-baked chicken to save time. I did! :)
